Notes

After about one week of primary fermentation with neutral sacc yeast, rack to minimize headspace and add starter of dregs (I added 5 different lambic or lambic-style beer dregs, plus a vial of Brett Lambicus). Can add a few oak cubes of you like (just boil them first so they’re not too strongly flavored). Put in a temp-stable closet and forget about for a year or so...
