This 20 gallons is being used to top off the 20 gallons I pulled from the original 60 gallon barrel for a solera-style refermentation in the barrel.
Yeast culture is a mix of bottle dregs and Bootleg Biology Sour Solera 2018 Spring Blend.
AGED HOPS!!!
The 3 hour boil hops were pellet hops aged for 10 years.
IF NOT USING AGED HOPS, use very low AA hops in the boil or 1 hour for an IBU around 10.
