Notes

Brewed Jan 19th. Fermented at 49F for first four days -- vigorous fermentation was pushing beer out of airlock. Blow off tube applied. Activity slowed after fourth day. Allowed to free rise until 58F at day 6. Minimal additional airlock/blow off activity during that time.

Gravity reading taken Jan 24th -- 1.012 with signs of obvious fermentation (krausen). Bright yellow and opaque with yeast. No diacetyl noted during gravity reading but ++ sulfur present. Gravity sample tastes of deep bready malt. Very nice flavour.

Gravity reading taken Jan 29th -- 1.008 Beer has yeast rafts floating on top but beer is much clearer and no more signs of fermentation. No off flavours noted on sample. Strong aroma from the Spalt hop addition with a clean malt that ends dry.
