Starting water volume: 8.5 gal
Heated water to 158 F
Added grain, temperature stabilized at 154 F
Mashed for ~60 minutes until iodine test showed no remaining starch
Removed grains and let grain bag drip into mash for 15 minutes
Heated mash to boiling
Added first hops at 60 minutes to knock out
Added second hops 20 minutes to knock out
Added Irish Moss 15 minutes to knock out
Added wort chiller 1 minute to knock out
Cooled to 80 F
Transferred to primary and airated 15 minutes
Let cool overnight to 68 F and added yeast
Transferred to secondary after 2 weeks and Dry hopped
Transferred to keg after another 2 weeks
Chilled keg to 40 F and force carbonated to ~15 psi
Tasting notes:
Aroma: slight aroma of citra hops, mild malt
Appearance: pale, high clarity, good head retention
Flavor: First sip is slightly bitter, but a crisp finish with notes of citrus
Mouthfeel: Light, low body
Overall: Bitterness is restrained for this APA. Light body and a crisp citrus finish make this beer easy to drink. A good, safe, party beer.
