I have been brewing for about ten years, this is my first Kolsch.
I tried to find a recipe that is based on the original style. I used BYO to find the ingredients and did a search on Brewers Friend to find a recipe that was close. The next step is to cut it down to three gallons. Made sure to keep the starting gravity and IBU's to style. Additional modifications may be required due to availability of ingredients from the brew shop
BYO ingredients
OG = 1.048 (11.9 °P)
FG = 1.009 (2.3 °P)
IBU = 25 SRM = 4 ABV = 5.1%
Ingredients
2.6 lb. (3 kg) Briess Pilsner liquid malt extract (2 °L)
4 oz. (113 g) Munich or wheat liquid malt extract (optional)
5 AAU Hallertau pellet hops (1.25 oz./35 g at 4% alpha acids) (60 min.)
White Labs WLP029 (German Ale/Kölsch) or Wyeast 2565 (Kölsch) yeast
