Yeast: 2 - 5g packets of Lalvin EC-1118, bought from https://www.amazon.com/Lalvin-Dried-Wine-Yeast-1118/dp/B003TOEEFG/

Combine 15 lb of honey and top up to get 6 gal total volume.

There were two differences, cause more by not noticing the details on the last recipe, rather than conscious choices. We added only half a campden tablet to roughly 7 gallons of water, instead of a full one, and used only two packets of yeast, instead of 4.
