Guidelines on session beer:
Mash around 68°
Bittering introduced in the beginning of boil. IBU around 45
Be gentle on the hops.
Make the beer balanced.
Adjust ph in the mash and sparge. (<5.6PH)
Light munich/vienna malt up to 20% of grist for good body.
Cristal malt for residual unfermentable sugars. (crystal 20)
Flaked oats - for mouthfeel. (1/2 of cristal malt weight).
Make sure enough calcium chloride is in the water before mash.
Carbonate slightly less than usual IPA. (1.9-2.3)
BALANCED beer is the goal.
Hops:
Galaxy dominant.
El dorado 10-20% (is quite sweet but gives balanced bitter taste)
Huell melon (works well with galaxy)
Other options: Azacca (piney, fruity), Topaz, Hallertau Blanc...
