My juice had ascorbic acid, which shouldn't harm the yeast. Don't get juice with preservatives
Redstar Pastuer champagne yeast. Rehydrated in room temp water before pitching.
Oxygenated with pure O2 for 1min 40sec.
Start fermentation at 67 F. Slowly ramp up as fermentation slows down.
Going for big alcohol on this one because it will be freeze distilled.
