First attempt:
I am gunning for something like Old Speckled Hen,in terms of sweet, malty goodness and drinkability. The cascade should give it a citrusy edge. I am not going for a clone.
Well, just bottled this. OG was 1.045 and FG 1.008 to give abv 4.9ish. Lovely amber colour. Not tasted yet.
Bottled 7 500ml/ 17oz bottles and 9 330ml/ 12oz bottles. Head space variable plus 200ml of sugar solution added.
Very tasty ale, but flat...Need to up the CO2 level. 2.2 vols may have been better, so next time 45g of sugar.
After about 2 months this was very good indeed.
Second attempt:
Slightly edited recipe. Moved house and new equipment so scale has increased too.
