Notes
Used 1.5 Tablespoons of pumpkin pie spice that I got from a spice store in Sarasota while I was on vacation. Spice was added at knockout. Their website is: www.spiceandtea.com. It seems like a good compromise between using McCormick's and making your own.
Mash temp 150º
Baked a butternut squash drizzled with molasses at 350º for an hour. Mashed it and mixed it into mash
Used two packs of Trappist yeast without a starter.
I plan to add 12 ounces of Myers dark rum at bottling, and age the bottles.
TASTING NOTES:
When I first sampled this beer in 2018 I hated it. The rum had overpowered everything and it was honestly hard to drink. I saved the bottles and continued to store them in my conditioned 65º chest freezer, and I sampled them again in July of 2019. It was good! This beer needs to age, and seems to improve over time. I've still got plenty left, and I plan to drink them on occasion and hopefully brew another batch at some point!
