  • overnight mash, started 160 F, next morn at 140 F
  • touch of tartness in flavor?
  • planned for 72% eff, hit 78% on the pre-boil grav
  • FWH hops
  • added gypsum before boil
  • irish moss at 15min
  • boiled for 55 min. propane started sputtering towards the end
  • hit 1.050 on the nose going into fermentor
  • added 2 packets of US-05, one older one newer
  • 12/14 - gravity at 1.020, cranked up temp to 68 F
  • 12/17 - gravity at 1.015 for 2 days, dropped temp to 52 F
