Notes

Added 1.5 of table sugar to boost gravity
Couldn’t control fermentation temperature because basement too warm. Got up to 75 degrees. Beer tasted of Fusel alcohols. Dumped the whole batch and bought a second chest freezer;)

Second brew was much better. Used Imperial House A01 instead. Finished dry 1.013. Did last 10 bottles as a mole stout. Made a tincture of the following:
1 1/2 cups vodka
1/3 of cut up fresh habanero pepper
4 smoked guarillo peppers
2 smoked ancho peppers
4 cinnamon sticks

Added to taste at bottling. Ended up adding 1/2 cup of the tincture.

2nd place in First Round of 2019 NHC in Indianapolis.
