Chinook, Columbus, et al may work real well with malt, Mosaic a good compliment

Boofing - west Balt. slang for something that's stinking. In this sense, it refers to the rapturous aroma of sticky, resinous, piney, herbal, minty, slightly tropical fruity hops/yeast and a touch of grainy sweetness, complexity, and aroma.
Pale 2-row, Simpson's Golden, or Pearl?
WLP001/WY1056/US05 can also give a funny peachy note if fermented cold.
If need "crispness," keep water more soft and low in carbonate. Try a touch of Calcium Chloride and Calc. Sulfate (gypsum) to between 50 & 100 mg/L. If beer seems "flabby," ere on side of Calc. Sulfate. Vice versa if too "snappy." pH at 5.4
