I have another recipe based on New Glarus's Spotted Cow (in the clones folder), but I'm doing this one first because it's simpler and doesn't have any adjuncts which I don't think add anything anyway.
I typically don't like cream ale. It's a style that's trying to be an American lager with ale yeast. i'm making this more of an American Helles while still fitting the cream ale style guidelines which are very loose so it works out.
Originally I made this with SafAle US-05 which is probably the most legit yeast for American Cream Ale, but next time I might try it with 34/70 or K97. In the end it was very lager-like and clean.
