Notes
Mash grains at 152°F (66°C) for 60 minutes. Mash out at 170°F (77°C) for 10 mins. Add Irish moss at last 15 minutes of boil. Add honey at end of boil. Cool, aerate and pitch large starter of yeast. Pitch yeast at 72°F (22°C).
Primary fermentation for 8 days at 65°F. Rack to secondary for 10 days at 65°F.
