Use Wyeast 3787 or White Labs 530. Need a huge amount of yeast for 10-11%brew.
Start fermentation at 67 and ramp up to 72-73 over course of week
Crash to 50ish and rack to secondary for another month before confirming terminal gravity.
Condition in stainless up to 6 months.
5bbl aged in stainless blended with 5bbl batch aged in calvados/port/bourbon/rye barrels?!?
