1) 1L starter @ 1.040. Harvest 200ml.
2) Slice & freeze the mangoes, then thaw & add at the end of 2 weeks. Make sure to weigh it down - no fruit should be exposed to the surface. Ferment for another week (or 2) @ 72, before kegging.
