I've used the balanced profile before with good results. Light and hoppy would tend to mute the malt expression - fine in a less hoppy beer, but this one will likely need as robust a malt expression as possible. Notes
Moderate-warm mash temp for strong alpha saccharification, paired with a heavily caramelized malt bill should make for a strong, rich-tasting backbone on which to build a lot of hop flavors, on a balanced water profile that allows both malt and hops to shine. The boil hops are an ounce each of Simcoe and Mosaic, continually hopped for 40 minutes and reinforced at the end of the boil by 2 ounces Hallertau Hersbrucker to give a bit of floral complexity underneath all the prolific tropical fruits. Double dry hopped with El Dorado and Simcoe hop hash, goal is a supremely hazy, intensely juicy explosion of fruity hop flavors on a sweet enough malt backbone to carry a strong flavor profile on a relatively light alcohol budget. Moderate bitterness of around 1 BU/GU. Yeast is WLP 095, Burlington Ale yeast - rumored to be the same strain as Heady Topper - pitched from a starter.
