Notes

Day 0: Vitality starter 1,000 ml wort with WLP840 for 4 hours, then pitch and ferment at 66F
Day 10: Mix and add 170
F water plus unflavored gelatine to keg. Rack clean beer into oxygen-purged keg, then set PSI to 25.
Day 11: Reduce pressure to 10 PSI, then dump a pint of yeasty beer.
Day 18: Sacrifice first pint, then enjoy.
