First brew stats:
OG: 1.066
FG: 1.002 (8.4%ABV)
Open fermentation for first 3 days, then cap with airlock and keep warm (80-85*F)
Rack to secondary after 4 weeks on top of 3 pounds carmelized figs, deglazed with some of the beer itself.
Allow to sit another 2-4 weeks before crashing and bottling.
Plan to add half packet of rehydrated champagne yeast and bottle into champagne bottles for Christmas
