Notes
Eight weeks in primary, 4 weeks in secondary. Added real (not vanillin) vanilla extract in secondary along with 15psi CO2. Tapping this beer at 12 weeks is not recommended. Aging vastly improves the character of this brew. However, due to Covid-19 stay at home orders, I chose to tap early. Usually, this beer would age 10 months in secondary with CO2 at roughly 65 degrees F.
