Notes
Original recipe was based on Ed Wort's Haus Pale. I bumped up the hops in my last batch (See Dustin's Folly IPA). I liked the hop bump, but the beer was too cloyingly sweet, I suspect from the crystal. I like a dry finish in my IPA so I think this recipe could benefit from a small addition of cane sugar, an extra 1/2 lb of two row, and an extra 1/4 lb of vienna to help balance the extra abv.
Recipe uses a bunch of 2 year old Citra and Chinook hops I had sitting in my freezer. Citra used to be 13.7% AA. Chinook used to be 11.5% AA. (aa calculator - http://brewerslog.appspot.com/HopAlphaCalc)
Aerate to approx 12ppm prior to pitching yeast by turning on pure oxygen with a .5 micron airstone for 60 seconds.
Chill and fine with 1/2 tsp gelatine to drop haze. (Procedure here - http://brulosophy.com/2015/01/05/the-gelatin-effect-exbeeriment-results/)
Should be grain to glass in 1 month. Drink fresh.
Tasting Note. Turned out great, Very floral. Floral drops off quick as is expected for an IPA. I will brew this again.
