Greg Dunning - Beer Stalin • 07/14/2020 at 01:55pm Hi Sunky Dunky. Huge apologies for not getting back to you sooner. If your final gravity stopped at 1.022, you did better than me. You are reading my recipe targets. What actually happened was that my original gravity was 1.050 (not 1.066) and my final gravity was 1.012 (not 1.022), producing 5.1% ABV. It tasted like Hofbrau but did not meet the technical specs. I'm much better at hitting target OG now but hitting target FG is still a bug challenge. I think the key is using more unmalted grains that won't ferment but will leave residual sugars. I don't have the temperature control to stop the chemical reaction at the malting stage.
