Notes

For sugar in grain bill, use barbados or some other semi-refined sugar.

Ferment through the primary and then transfer to 10 gallon secondary. Add 8 pounds of sour cherries and 4 pounds of sweet dark cherries. Both should be previously frozen and warmed to room temp. Add a blanket of CO2 if possible. Allow to sit on the beer for 2 to 8 weeks. Rack to a carboy and allow a couple of months to settle out before kegging or bottling.
