1 lb 2.6 oz orange blossom honey
2 lb 4.5 oz wild flower from Iowa
2 lb wild flower from Door County
2 lb 8 oz wild flower
7 lb 15 oz
starter was roughly 6 oz of misc honey and some DME
made 12/18/16
transferred 1/26/17
sample taste is astounding. No high temps to wipe out floral aroma leaving all of the flavor of the honey behind.
FG on point: 1.001
3/20/17
color darker than anticipated and still has slight haze
8/12/17
haze gone and mead bottled
tasting notes:
The nose is spectacular. Smelling of a bright bouquet of flowers. The taste was drier than anticipated and is similar to a dry white wine. Very happy with the way this turned out but I think a bit of french oak could have given it a bit more depth and balance.
