Steeping pale malts (such as wheat and MO pale) will contribute almost no fermentable sugars. It will only cause a starch haze in the beer and make it more prone to infections (starches, being unfermentable by brewing yeast, are food for wild yeast and bacteria). Unless you are actually doing a partial mash, i.e., mini-mashing the grains between 60Â°C and 70Â°C (between 140Â°f and 150Â°f) for at least 15 minutes, I recommend removing them.<br>Even if you do a partial mash, I don't think MO and wheat will contribute much to your beer, so why not just steeping the roasted barley for colour? If you want some extra complexity that you think the MO would contribute, you can steep a little bit of crystal instead, along with the roasted barley.
