American Amber (Red) Ale with a sharp bite of citrusy hops.
American 2-row pale ale malt, American Crystal 60L and Victory malt rounds out the grain bill. Mash temperatures in the range of 152°F to 156°F creating a wort with a nice balance of fermentable and non-fermentable sugars.
Citra hops adds a unique tropical fruit flavoring; a whirlpool of Cascade hops adds grapefruit flavor and aroma.
Saint Simon the Zealot is yet another American Amber Ale in the Twelve Apostles beer line. Research with water profile, temperature variations, grain bill, hops varieties and yeast strains provide endless opportunity to evolve, improve and develop this beer over the year.
