Notes

No boil, just bring to a boil, cool to 35 Celcius, sour w LActic acid and ProbiMage when transferring to fermenter. No aeration. Went down to pH 3,8 pretty quick.

Pitched 05 after 24 hours of souring directly in fermenter. Shaked fermentor as way of oxygenizing. Probably not enough. Next time treansfer with aeration to another fermentor.

Grapes in after stormgjæring/primary fermentation. MAshed, with juice and all in a mashbag in the fermentor.

Fermented down to FG 1.014, so bottled w 6gr/L just to get a good fizz.

Colour is gorgeous. Taste quite tart but subtle grape hint.
