Notes

Pitched at 68 and fermenting at 68 room temperature. I want more clove than banana flavors. I pitched two smack packs without starter (didn't note how old they were), and it took 72 hours before I saw any airlock activity.

Got this down to 1.017 - almost target. The beer is drinkable, but needs to be tweaked. I think I should have fermented a bit warmer to bring out the banana - or perhaps use a different yeast. This is all clove and the rye doesn't blend so well with that flavor profile. This definitely sounded better in my head. I'll definitely be drinking this one after I've already mustered up a decent buzz. This one is coming out of the keg to make room for something better and getting racked into bottles. Bummer.
