Notes
Mash guidance:
While holding barley at 133F, execute a ceral mash by mixing about 10% by weight barley with the grits and heat to 158F for 5 minutes then bring to a boil and boil for 30 min.
Water volume required for cereal mash is not specific. Add enough water initially for consistency of thin gruel and then, during the boil, add water as necessary to maintain consistency.
Once 30 min boil is complete add grits to barley in mash tun and bring temp to 158F for 45 min.
