Mash temp at 149 for 1 hour mash rest.
Rested for an additional 6 minutes.
Sparged with 5 gallons of water at 175 degrees Fahrenheit. Sparged for 35 minutes.
Started boil. At boil added .25 oz of 11.6 AA simcoe hops.
At 15 minutes added yeast nutrient and whirlfloc tablet.
At 10 Minutes added .5 oz of 11.6 AA simcoe hops.
At 5 minutes added .75 oz of 11.6 AA simcoe hops.
At 0 minutes whirlpool wort and added .5 oz of 14.2 AA simcoe hops.
Cooled wort to 78 degrees and began transferring to carboy.
Transferred entire kettle to carboy.
Took gravity for an OG of 1.060.
Pitched yeast at approx. 74 degrees.
