Hi,
This isn't a complex recipe at all - all quite straightforward, but the results were not what I'd expected.
I used a grainfather all-in-one mashing/boiling vessel. All started well with my OG coming in bang on target if slightly higher - 1.051 to 1.055. However, the fermentation stuck and stopped while the gravity was still up around 1.025 (this is not the first time this has happened to me so I won't blame the recipe).
I tried various things to restart the fermentation but to no avail. (Previously I had accidentally mashed too hot and produced too many unfermentable sugars, but I'm pretty sure this was not the case this time.)
Anyway - after debating whether or not the beer was worth saving I decided to rack it off into a Cornelius Keg and left it for a couple of weeks.
I chose this recipe as it suggested it was a clone for Long White Cloud. The beer that I ended up with was really nowhere near Long White Cloud, but was actually remarkably tasty and got very positive feedback from friends and family.
Yesterday I bought the ingredients to make another batch. Perhaps this time I'll get closer to the Long White Cloud I was chasing. If not I'll be perfectly happy if I end up with the same result as last time.
