Ended up using 15 grams of El Dorado for the dry hopping part along with 20 grams more of chopped fresh ginger and 20 more grams of dried lemon peel. Slapped all of those ingredients into a pouch and let it simmer in the brew for 4 days before bottling.

Actual Final Gravity at the bottling point was 1,015 so the final ABV was slightly over 7%.
