Wow! Over 100 participants in the Yeast selection survey! That's pretty awesome! Here are the results. So the Chico strain won by a mile and the medium of choice was US-05 dry yeast. The temperature consensus was 66F/19C. As a practice, I always double pitch dry yeast and I always ramp up to 70 after fermentation to allow the yeast to clean up. So I will be doing that on this recipe as well. Here's what the recipe looks like:
