Notes

Puree: 3oz/gal Dried Cranberries (rehydrate in boiling water for 15 minutes), puree in blender with full zest of orange. Strain and add liquids to primary after krausen drops and let sit for 2 weeks before bottling.

So I'm waiting for bottle conditioning but my sample before bottling lead to a expectantly dry product. Belle Saison is a beast, the Beer is about 10.5% ABV. This is a bit higher than anticipated because original fg estimate was 1.12 instead hitting 1.001! The taste lead to way too much coriander and a bitter aftertaste of ginger and bitter orange. The cranberry cannot be distinguished. The beer still tastes good but much spicier than expected. I will brew this again but lower the end of boil spice additions as it is over powering the yeast produced flavor. I would also up the IBUs to about about double (40) from the 18 points or so that I got.
