Notes
An ode to that Vermont classic.
Mash at 153F for 60 min. Add First Wort Hops when entire boil volume approaches 160F. 90 minute boil. Dextrose gets added at 30 minutes to go. 0 Minute hopstand hops get added at flameout and stand for 45 minutes. Pitch and ferment at 62F raise temp to 68F after major fermentation has slowed. When fermentation slows, add 2 oz dry hop. When fermentation is complete,cold crash to 38F for 2 days. Rack and add 4 oz dry hop for 3 days then rack to CO2 purged keg, cold crash and carb to 2.0 vols (8 or so psi for serving at 44F) and serve fresh! You will push out any junk with the first half pour.
