Maybe try fermenting to finish, remove half of the fermented wort to secondary (2.5 gallons), then add maple syrup to the rest to see what it does, take it up to 18 or 19% abv. If adding .375 lbs maple syrup to 2.5 gallons, will bump up to 19.19% abv if the fg drops down to 1.023.
