Steep 120L Crystal and Chocolate Rye for 30 min. at 155F. Add (3) Lbs. DME, bring to boil. Add 1st hop addition of .5 oz. citra (12.7 AA), which stays for total of 60 min. wait 45 mins. and add 2nd hop addition of .5 oz. citra, which stays for a total of 15 min. Add remaining (3) lbs. DME and (1) lb. honey at 5 min. mark, stir in well, then add wort chiller for the remaining minute.

Chill wort to 70F, add 3 gal pre-boiled, cooled water. Add hydrated yeast and ferment in 6.5 gal carboy.
