Collect 128 ounces of first runnings, boil down to about 16 ounces to caramelize, and add to brew pot. (This is reduced less than called for in original recipe, which would be about 8 ounces for this size batch.)

Skotrat uses Northern Brewer hops, but according to the Traquair House site East Kent Goldings are used. I've used both, either is fine.

Traquair House uses isinglass instead of Irish moss.

I've brewed this recipe twice (with Maris Otter) and am bulk aging a third batch. Reducing one gallon of first runnings down to one quart really adds a complex toffee-caramel flavor.
