Hi. Yeah I've brewed this a few times. Don't forget the jalapenos. Here's how I add mine: On bottling/kegging day, chop ~2 jalapenos per gallon, seeds and all, boiling them in a little of the finished beer taken from the fermenter. Let cool to room temperature for at least 5 hours, then add just the flavored liquid to the finished beer. Jalapenos' heat is different from year to year, terroir, etc. Occasionally 10 peppers will give quite a lot of heat, and other times, very mild. To ensure mild heat, go with perhaps 9 of them in 6 gallons. To ensure it is hot, I'd consider going up to about 14 of them. Otherwise, 10 or 11 is about good for a moderate heat in 6 gallons.
