Mine turned out a bit stronger on my limited pots and pans kitchen brewery. Loads of Sorachi Ace in this to me all excited so I followed as best I could for a 2gln brew.
I had to go away for business and probably left to ferment for way too long and then had a spillage accident when I racked, bottle conditioned with honey and left for a couple of weeks.
It was strong (8.3%ABV at my calculations) and had off esters in the flavour, it was flat and hard work. I put this down to sitting on the dead yeast and hops too long and was disappointed, but hey, all good fun. Would have said a barley wine or even a mead.
Anyhow, 3 weeks later I found a bottle that's been in the fridge for a few weeks, it's amazing.
Nice head, sweet aroma, chocolates and that sorachi flavour that I can't quite hit. Strong, dark and warming mind you, I'll give it another go for next winter.
