Although I realize this is an American style stout, I am not sure about how Centennial works with this beer. Seems to clash with the dark malts. Next iteration will call for a hop revision. Gravity has dropped down to 3.4'P which is a bit lower than expected. Even so, there is a fair amount of body and sweetness left. I feel like the M44 yeast from Mangrove Jack has a nice mouthfeel. Same for other beers I've used it for. Not quitte enough chocolatey goodness in this recipe. Perhaps it was the pale chocolate malt vs. chocolate malt. Next iteration will see more chocolate malt and perhaps bit more crystal malt.
