Philadelphia Water - Queen Lane Plant
Gypsum added to 15 gallons of starter water to raise calcium and help with mash pH. 1 tsp gypsum added directly to boil for hop brightness.
.75 Campden tablets per 15 gallons starter water.
Add whirlpool hops and pine needles, kill the flame cover and let stand for 45 minutes.
Aroma hops get added at 160F while chilling wort, for 5 min.
Drop the temp Pitch and Ferment at 66F.
Once fermentation slows, add first dry hop (6 day).
Cold Crash to 40F, once ferment complete, for 2 days before racking to secondary. Rack, bring back to room temp, then double dry hop.
