Sort of a hybrid between a Belgian Strong Golden Ale, a Brut IPA and a British Pale Barley Wine-Style Ale.
Step mash by pulling 1 or 2 decoctions for ultimate fermentability and some added toastiness. Sugar gets added at the end of the boil, stirred into maybe half a liter of some reserved second runnings, probably use Zucarmex or Florida Crystals unrefined sugar.
Non-flocculent London yeast should attenuate nicely.
Package in champagne bottles at Belgian levels of carbonation.
