Fermentation: I ferment in 2 x 6 gallon carboys. Add 3 Tablespoons Mulling Spices (Williams-Sonoma are the most flavorful) to each fermentor at Krauzen drop or a day sooner. Let beer finish out for another 10 days. 2 weeks total fermentation.
Won 3rd place in the Elk Grove Brewers Guild Holiday Warmer contest 2019.
I always make a yeast starter two nights before brew day. 500ml water, 1/2cup dme, 2 tsp GoFerm, 1 tsp Fermaid-K. Followup 1 night before with another 500ml water with DME.
Add 1 tsp Fermaid-K to the boil when you add your Irish Moss/Chiller.
Obviously you can scale the 2 Row down if you don't want the high ABV, or maybe it is a good holiday warmer at 6.8% You decide.
I'll be drinking this by Thanksgiving.
