Pre boil, 1.047.
Added first wort hops.
Boiled for several hours, because mash liquid kept coming out greater than 1.024.
Used total of 20 gallons of water for strike and sparging.
Final gravity 1.073.
Fermenter volume 12 gal.
Collected 10 mason jars of DME.
Pitched yeast at roughly 10pm with 1L yeast starter at 1.008.
Used buckets with no airlocks for first 2 days.
Fermented in the workshop.
Extremely active krausen by 10am blowing off through airlock hole.
Installed airlocks after 2 days.
