Changed recipe: Candi syrup increased to 392g (from 300g) (added to cube), Cane sugar removed (200g) and added 500g LDME (added at 69mins)
Pre-boil pH5.37 (added 3ml acid and reduced to pH5.27)
3/9/24 pitched yeast into fermenter
8/9/24 Dry hopped
10/9/24 Dumped yeast and hops. Still some slight activity. Tasting good, citrus aroma and flavour, some fermentation esters, that faded quickly. Should clean itself up with a few more days.
13/9/24 Lowered temp to 13°C.
15/9/24 Bottled 6 bottles (2.7 volumes CO2) and kegged.
29/9/24 Tasting great. Well carbonated, light fruity aroma, with medium fruity citrus flavour. Very drinkable.
