Single decoction at mash out. At 156, pull 6 quarts & boil x 20 minutes. Add back to mash at end of 30 min alpha rest.
- 90 min boil, Hops loose in kettle, Chill at end of boil.
- Oxygenate and pitch starter w/ nutrient & clarity Ferm
- Ferment at 48F. Slowly raise temp once activity subsides.
- Once fermentation is complete, cold crash x 7-10 days. Keg and lager for 4-5 weeks as close to 32F as possible.
