The Tree House recipe in the YouTube description has 14.5 lbs of grain, which would produce over 7% alcohol, too much for my blood. So I lowered the grain bill to 11.5 lbs, which should yield 6.1% ABV, and should be plenty. I kept most of the percentages from the original recipe, except for the dark grains, which I lowered to 3.1% each. I’m afraid if I keep it at 3.5%, this will be too stringent. We shall see. If I don’t get the deep coffee and chocolate notes, I’ll raise it back to 3.5%. Lastly, I added 1/4 lbs of flaked barley to give the beer some head retention.
