Notes
  1. Bring 2.25 gallons Arlington Heights tap water to 155°F
  2. Add nylon bag containing grains to water
  3. Cover and steep at 150°F for 1 hour
  4. Squeeze liquid out of beer with tongs
  5. Bring mash to boil
  6. At 31 min left in boil, add 0.1 oz Centennial hops, 1 oz maltodextrin, 1 tsp yeast nutrient
  7. 9 min left in boil add 0.1 oz Centennial hops, 0.1 oz Mt. Hood hops
  8. After 60 min stop boil and remove from heat
  9. When temp. reaches 175°F, add 0.2 oz Mt. Hood hops, 0.2 oz Centennial hops. Leave hops for 15 minutes, swirling every 5 minutes.
  10. Cover, leave overnight to cool to room temp.
  11. Pour mash through filter into fermenter bucket, aerate.
  12. Pitch one packet Safale S-05 yeast into mash.
  13. Put lid on bucket with airlock
  14. After 14 days of fermentation, bring 1 C of water and 1.0 oz priming sugar to a boil
  15. Cool sugar solution to room temperature, rack beer onto sugar solution.
  16. Bottle and let condition for 6 weeks before enjoying.
